Fresh Tomato Soup

This soup is so delicious and is a great way to use up the last of your summer tomatoes. I got this recipe from the latest copy of Taste of Home magazine. It is so good!

Tomato soup

15 tomatoes, seeded and quartered
1/4 c. plus 2 T. olive oil, divided
8 garlic cloves, minced
1 onion, chopped
2 c. water
2 t. salt (to taste)
pinch red pepper flakes
1/2 c. heavy whipping cream
fresh basil or 1 t. dried

Places tomatoes in a baking pan, drizzle with oil and add garlic. Bake at 400 degrees for 25 minutes. Cool, then remove skins. Saute onion in olive oil. Add tomatoes with garlic, water, salt and red pepper flakes. Bring to a boil, reduce heat and simmer for 30 minutes. Process with a hand blender until smooth. Add heavy cream and basil. This served 6 for lunch. For a dinner, I would double the recipe. My children had elbow noodles in theirs.

I LOVE tomato soup. Will have to try this. My favorite summer recipe has been cold tomato soup. It's SO easy (note: these ingredients are for two servings only) - 1 beefsteak tomato (peeled), 1 cup plain yogurt, 8 basil leaves, salt and pepper to taste. Dump everything in blender or food processor and puree until smooth. Serve and eat. :-)
