I haven't shared a recipe in quite awhile--probably because I got tired of typing so many out for my recipe book. This one is from the book, and it is one we have quite often for breakfast. My mom made this for me when I was a child. My kids LOVE it and request it all the time! I have to triple this recipe to feed my crew!
Dutch Pancake
3 eggs
1/2 c. milk
1/2 c. flour
1 t. sugar
1/2 t. salt
1 T. butter
I mix all the ingredients while the oven preheats to 425 degrees, and the butter melts in a large skillet on the stove. Then I pour the batter into the skillet and cook for 3 minutes on the stove. Next, I insert the pan into the oven and bake for about 10 minutes. This thing puffs up real big and golden. I sprinkle it with confectioner's sugar and serve with homemade jelly.

We make something similar, but it is called a german pancake. There are chopped sauteed apples in them as well. I haven't made them in awhile, but they are really good.
We call it "puffy pancake" at our house- YUM!
this recipe is one on our list of "to try" from your book. :) we just had the oatmeal breakfast cake this morning...sooooo yummy!
we are LOVING your recipe book-I even made your Bean Cakes-my hubby was pretty skeptical :) but after dinner he said it was "a keeper". that's HIGH PRAISE! :)
We make something similar, but we melt the butter in a glass baking dish and bake the whole time in the oven.
We, also, have added an apple sauce (not plain apples sauce) on top of ours, or served with syrup or jam.

Laurel, I do that, too :) when I triple the recipe--it makes it so much easier! Just place the pan in the oven with the butter (I sometimes end up leaving it in there too long and letting it burn!).
