We tried this new recipe last night and Cameron declared that it was so good that it needed to go into our regular dinner rotation. When I told Anna I was posting this recipe she said "Jambalaya: It will set your mouth on Fi-ya!" (she meant fire--ha ha) :). I know traditional Jambalaya recipes call for shrimp, but I am not a fan of seafood--that is why I chose this particular recipe. Cameron said he would have loved the addition of shrimp. If you make it, I guess you can decide whether to take it or leave it. I don't remember where I got this recipe . . . but I am going to post my version of the recipe, which is for a big family. I decided to make it to celebrate Jerome and Ruth's 6 month anniversary because I knew it was full of the stuff they like to eat: Chicken, sausage and RICE! Those of you with little Liberians may find the same to be true for you!
Jambalya:
1 whole chicken, cooked in the crockpot in water to make chicken broth
4 T. butter
1 lb. polish sausage
3 cans stewed tomatoes (chopped)
I used about 12 c. chicken broth (some of it cooks down)
1-2 green peppers, chopped
1 medium onion, chopped
2-3 celery stalks, diced
sea salt
rice
3 t. hot sauce
I threw a whole chicken in the crockpot and covered it with water. I didn't add anything to it because I didn't have time--you can add all the "goodies" to make it rich stock, if you like. I melted some butter in a large pot and threw in my green pepper, onion and celery and cooked until soft. Then I dumped in my cans of stewed tomatoes (I coarsely chopped these once I opened the cans). I added the sausage, which I diced into small bite-sized pieces. I cooled my chicken and deboned it and added it in pieces to the pot. I added about 12 c. of broth and seasoned this with sea salt, pepper and hot sauce. We ladeled this over rice in bowls and put the bottle of hot sauce on the table. The recipe calls for 3 t., which for me is not enough. Most of our children wanted additional hot sauce, including Elyse (why am I not surprised?).
Easy, cheap and good! (especially if you get chickens when they are $.49 a lb!).
