African Peanut Soup

This soup is different. Some will like it, some won't. My friend Dianna gave me the recipe and as she has adapted it to her family's likes, so we have, too. Your Liberian children will love this (if you have Liberian children :)) Everyone in our house likes it. However, for me, it is one of those soups that once I eat it, I don't want it again for a good month, unlike my lemon chicken rice soup which I could eat every week! Again, this is versatile and I don't measure (sorry), and I am SURE it is not authentic.

African Peanut Soup (my version)

1 whole chicken
water
peanut butter
1 can of corn
2 cans diced tomatoes
green pepper
rice
onion

So, here's what I do: I throw a whole chicken into the crockpot and cover it with water and and throw some chopped onion in. I cooked that for 5 hours on High. By the way, my crockpot is 6 qts.-so about 10 c. of water. This feeds us for one dinner and one lunch and there are 8 of us eating, so it makes a lot. I then pull the chicken out (it all is falling apart) and I let it cool and debone it--gross, but necessary. I add some peanut butter to the broth--I think I added about 4 c. I just added and tasted, added and tasted. I dumped in 2 cans of diced tomatoes and 1 can of corn. I sauteed some green pepper and added that ( I could have added it when I was cooking the chicken, but I forgot). I added the chicken back in and seasoned with some sea salt. I served this over a generous helping of rice in each bowl. I am contemplating adding sweet potato next time. Good flavor. Very hearty. And, I didn't have to heat my house in this HOT weather. Gotta love that crockpot. I am using it today to make lasagna roll-ups (courtesy of my mother-in-law).

I love all of the recipes you post! I really need to print them all out and try them. I know my kids would love them - they sound great!

Thanks for the great devotional thoughts as well! I loved your last post about time being fleeting and also your adopting older children post. It is nice to have a kindred spirit out there - even if we've never met!

Hey Laura! Thanks for linking to my blog!

This recipe made me smile. I made Thai noodles with spicy peanut sauce recently- that recipe uses peanut butter as well, and Scott teased me the whole time we ate, "Where is the jelly? If only these noodles had jelly, this would be a great meal." He liked it, but we Americans are not used to peanut butter apart from cookies and sandwiches, and the occasional banana.
We laughed through the whole meal, and I don't see it making a repeat at our table anytime soon. It's fun to experiment with new food, and our kids loved it.
